Enfrijoladas with a $5 budget

Ingredients:
• 1 cooked and shredded chicken breast $2.00
• 4 cups pinto beans $0.50
• 1 chipotle pepper $0.15
• 18 fresh tortillas $1.00
• ½ cup of cream $0.50
• ½ cup of fresh cheese $0.50
• ¼ finely chopped onion $0.35
Preparation:
- Blend the beans with their own broth.
- Season with a little onion and let it simmer.
- Dip the warm tortillas in the bean sauce and roll them up.
- Put on top (or inside) a little bit of chicken.
- Put cream, cheese and chipotle pepper (optional) on top.
