Preparation of banana or flaxseed tortillas

Ingredients:
• 1 plantain (not ripe)
Process:
-Peel the plantain and cut it into small pieces.
-Cook it in hot water for 10 minutes and then let it cool a bit.
-Grind it, with a processor, a fork or with your hands.
-Add a pinch of salt and pepper (optional).
-Preheat the griddle.
-Divide the dough into small balls to make the tortillas with a machine. If you don’t have the machine, you can use a board to press it; but remember that in both methods, it is necessary to use plastic so that it doesn’t stick.
-The tortilla will be cooked when the color of the dough is brown and easily slides in the pan.
* Note: calculate that with 1 plantain is enough to make 4 tortillas, and we recommend eating them freshly made.
Preparation of flaxseed tortillas
Ingredients:
• 1 tbsp. olive oil or coconut oil
• ¾ cup of water
• ¼ tbsp. of salt
• 1 cup ground flaxseed
• 1/8 tsp. of turmeric powder, optional
Process:
-Mix the flaxseed with the oil, turmeric and salt, while you begin to integrate the ingredients. Add the water little by little and when they are well integrated it is necessary to knead with the hand.
-Preheat the griddle
-Divide the dough into small balls to make the tortillas with a machine. If you don’t have the machine, you can use a board to press it; but remember that in both methods, it is necessary to use plastic so that it doesn’t stick.
* Notes: This flour yields a lot, a small ball yields for a tortilla of good thickness and will cook faster on the edges, we also recommend eating it freshly made.
