Tuna and potato cakes with chipotle sauce


Ingredients:

• Tuna

• Mashed potatoes

• Egg

• Salt and pepper

• Flour

• Canola oil

Chipotle salsa

• Mayonnaise

• Sour cream

• Chipotle in adobo

• Lemon juice

Procedure:

• In a large bowl, combine tuna (already drained), mashed potatoes, salt and pepper. • Beat eggs with a little bit of salt, this will be used as a batter for the pancakes. • Put flour in a plate.

• Put oil in a large skillet at medium heat. • While oil is heating up, start making the pancakes and coat them in the flour and egg batter.

• Place pancakes in skillet and cook on both sides for about 3-4 minutes or until golden brown (check that the egg is completely cooked).

• Place in a blender sour cream, mayonnaise, 3-4 chipotle peppers, salt and pepper to taste, and a touch of lemon juice. Blend until smooth. • Serve pancakes with chipotle sauce.
