Mexican tilapia fillets

Ingredients:
• 1lb. fish fillets
• 1 onion finely diced
• 2 garlic cloves finely chopped
• 2 tomatoes diced
• 3 jalapeño peppers finely diced
• 3 tbs. canola oil
• bay leaves
• salt and pepper to taste
• lime juice (optional)
Procedure:
SAUCE
• On a sauce pan heat up oil and cook onions, garlic, tomatoes and jalapeños.
• Season with bay leaves, salt and pepper, and cook for about 5-7 minutes until all vegetable have soften.
• Heat up canola oil in skillet over medium high temperature.
• Season fish fillets with salt and pepper and place on skillet cook for about 2-3 minutes on each side. • Once fish fillets are done, add sauce and serve.
*Some lime juice will give an extra flavor.
