Stuffed cucumbers
Ingredients:
• 3 cucumbers
• 2 potatoes
• 2 carrots
• ½ cup of peas
• chopped cilantro
• 2 tbsp. of mayonnaise
• cup of tuna or cooked chicken
Preparation:
-Wash and peel the cucumbers; Divide them in two equal parts and cut them in half to remove the seeds.
-Wash carrots perfectly, peel and chop them into very small pieces. Do the same with the potatoes and any other vegetable that you want to add.
-Put the vegetables to simmer.
-Mix the cooked vegetables with the tuna (or chicken, if you prefer) and the mayonnaise.
-Stuff the cucumbers with the mixture and decorate with chopped cilantro
-Accompany them with brown rice.
