Rice with shrimp


Ingredients:

• 1 cup of brown rice

• 1 red pepper

• 2 tbsp. of soy sauce

• 2 poblano peppers

• 1 yellow squash

• 2 tbsp. of lime or lemon juice

• 1 pound shrimp

preparation:

-The day before, prepare the brown rice and refrigerate it because the rice should have a firm consistency.

-Roast the poblano peppers, let them sweat, peel and remove the seeds.

-Wash the vegetables and cut them all into small pieces.

On a skillet:

-Cook the shrimp (if they are raw, until they change color).

-Add lemon juice and soy sauce before incorporating vegetables.

-Let them cook for 5 minutes, add the rice and mix gently.

* If you have leftover turkey, chicken, beef leg or any other meat you can add it. This dish is served hot.
