Green barbecue Manuela Gálvez style


Ingredients:

• 2½ pieces of pork

• ½ Lettuce

• 1 sprig of cilantro

• 6 jalapeño peppers

• 6 green tomatillos

• ½ cup of peanut

• salt and pepper to taste

Preparation:

- In a large and deep saucepan seal the meat, without oil because the meat doesn’t need it.

- Simmer tomatillos and jalapeño peppers in little water for 5 minutes.

- Blend tomatillos and peppers with the rest of the ingredients, but don’t add salt because you will not need it, since the key element is lettuce.

- Pour the green sauce over the sealed meat, season with salt and pepper and let it boil.

* This dish is served hot and can be accompanied with white rice.
