Pastor chicken and guacamole sandwich
Ingredients:
• 1 pound of chicken
• ¼ achiote bar
• ¼ cup of vinegar
• 2 cloves
• salt and pepper to taste
• 2 avocados
• ¼ slice onion
• 2 sliced tomatoes
• ¼ cup chopped cilantro
• bread (roll or loaf of white bread)
• chipotle pepper (to taste)

Preparation:
- Blend the achiote with vinegar, salt, pepper and cloves.
- Add chipotle pepper if you want the chicken to have a spicy flavor.
- Marinate the chicken in the mixture and leave it for a couple of hours.
- Once the chicken is already marinated, grill it.
- Cut the ‘bolillo’ bread in half and remove the crumb.
- Spread avocado on both sides and place chicken, sliced tomato and onion.
- Add lemon and chopped cilantro on top of the meat.
