Beans and mushrooms tacos with guacamole

Ingredients:
• 3 small corn tortillas (per person)
• 2 cups of mushrooms cut into small pieces
• 2 cups of beans (whole, cooked and drained)
• 1 avocado
• 2 chopped tomatoes
• 1 lemon
• 1 finely chopped small onion
• 1 bunch of epazote
• 2 serrano peppers (optional)
• ½ cup of fresh cheese
• 1 tbsp. of oil
• salt and pepper to taste
Process:
-In a hot pan, heat the oil and pour ¾ of finely chopped onion.
-Let it become translucent, and add the chopped epazote (remember to wash it thoroughly before chopping it). Here you can add the serrano peppers finely chopped if you want a spicy flavor.
-When they are soft, incorporate mushrooms and beans.
-Season with salt and pepper.
-In a bowl, prepare a guacamole chopped with tomatoes, the rest of the onion, lemon juice and a pinch of salt.
- When serving the tacos, heat the tortillas and fill them with the mushrooms and beans before putting the chopped avocado and the fresh cheese.
With this recipe you have all the food groups in the same dish.
