Lemon fish in parchment

Ingredients:
• 4 flounder or white fish fillets
• 1 tablespoon of butter cut in 4
• 1 yellow zucchini
• 1 zucchini
• ½ red pepper
• ½ yellow pepper
• 1 poblano pepper
• 1 lemon
• salt and pepper to taste
• 400 grams of spinach
• 300 grams of mushrooms (optional)
• olive oil
• 4 tbsp. balsamic vinegar
• 4 sheets of aluminum foil or parchment paper
Preparation:
- Preheat the oven to 350º Farenheit.
- Varnish the aluminum with olive oil.
- Season fish fillets with salt and pepper.
- Cut zucchinis, peppers, lemon and mushrooms into very thin slices.
- Put each fish on the paper.
- Add spinach and vegetables to each fillet.
- Add olive oil, vinegar, salt and pepper on top.
- Fold the packets carefully so that they are well sealed.
- Put in a pan, and bake for 10 minutes.
- Serve immediately.
