Chicken with mushrooms in spinach cream

Ingredients:
• 4 chicken breasts
• ½ chopped onion
• 1 cup of mushrooms
• 2 cups of fresh spinach
• 2 cups of light cream
• ½ cup of mozzarella cheese
• salt and pepper to taste
Preparation:
-In a pan, put a few drops of oil and sauté the onion.
-Add spinach and let it cook until it gets smaller, soft and dark green.
-Blend the cream with spinach, garlic and salt to create a green cream.
-Cut the chicken breasts into thin fajitas and grill with garlic and a pinch of salt.
-Add mushrooms finely sliced and let them cook for 2 min.
-Preheat the oven to 375º
-In a dish that you can put in the oven, place the breasts with the mushrooms and pour on top the spinach cream.
-Sprinkle mozzarella cheese on top.
-Bake for 10 minutes and serve hot.
