Butternut squash baked with broccoli, meat and cheese
Ingredients:
• 2 butternut squash (large)
• 1 small onion
• ½ pound ground turkey
• 1 red bell pepper, chopped
• 1 cup broccoli, chopped
• pepper and salt
• 1 tbsp. of olive oil
• 1 cup of mozzarella cheese
Process:
- Cut the squashes in half, spread a little olive oil on top and put them in the oven at 350º for 15 to 20 minutes.
- Take them out carefully and while they are hot, scrape out the flesh with a fork, but don’t break the shell because it will be used as a base.
- Finely chop the onion, fry it, add the ground meat and cook until meat is browned.
- Add the red pepper, broccoli and season with salt and pepper.
- In a large pan mix the squash pulp with the cooked meat. Stuff the squash, put the cheese on top and put in the oven for a few minutes, before serving.
