Beef pancakes with potatoes in green sauce for 4 people with $ 5


Ingredients:

• 1 lb. of beef to shred $3.50

• 2 eggs $0.25

• 6 tomatillos $0.75

• ½ onion $0.25

• 1 clove of garlic

• 2 potatoes cooked and chopped in squares $0.25

Preparation:

-Simmer tomatillos for a few minutes and liquefy them with ¼ onion to make the green sauce.

- Season with salt and pepper only.

-Pour the potatoes (previously cooked, peeled and chopped into small pieces).

-Buy beef meat that can be shredded and cook it with salt, garlic clove and a ¼ of onion.

-In a deep bowl, beat the eggs and incorporate the shredded meat into thin strips

-In a hot pan, pour a spoonful of the mixture in order to cook the egg (without letting it brown). These will be the pancakes. It is important to make them one by one so that they are small and of the same size.

-Add the pancakes to the tomatillo stew with potatoes and let it simmer for 7 minutes.

* This dish is served hot and may accompany it with white or red rice.
