Consume the leftovers wisely
For the family celebrations like Christmas and New Year’s, we always go overboard or badly plan the food that we are going to offer to our guests, because we think that it’s better that there is leftover food than that there is food lacking. So we cook two different pastas, 3 or 4 types of meat and stews, 2 salads, 3 or 4 dessert or cake options, and that doesn’t even include the drinks.
The good thing about this is that you can turn all those food leftovers into healthy dishes and you can save money on food after the holidays. For example, the turkey leftovers can be built into a salad, or you can add meat to a tomato soup or tomatillo with potatoes; maybe you prefer to make a ‘torta’ where you can add lettuce, tomato and onion.
Anyway, you have to take advantage of the leftovers to plan things that are more nutritious for your family while avoiding fried foods or those dishes that will require a lot of flour; for example, eating the leftovers as tacos because at the very least we’re gonna want to eat 4 tacos each time that we are hungry and the excess of tortillas is bad (given that they’re flour).
