Chicken thighs in chipotle and mango sauce
Ingredients:
• 6 chicken thighs without skin
• 6 green tomatoes
• 2 chipotle peppers
• 1 chopped fresh mango
• ½ onion
• 1 clove garlic
• Salt and pepper
Preparation:
- Blend tomato with peppers, mango, onion and garlic.
- Season with salt and pepper to taste.
- Simmer, add water and lower the temperature to the minimum.
- Seal the chicken, and then incorporate it into the sauce.
- Let boil until the chicken is cooked.
This dish is served hot and can be accompanied with brown rice.
