Tortillas
Invariably in healthy eating talks, the people of Mexico ask us why now we are all against tortillas, if they are part of our culture and we can’t live without them.
The answer we give them is that, indeed, tortillas are good as long as they are prepared naturally. That is to say, that the corn is fresh, that it has passed through the mill to make the dough and the tortillas are made that moment. But tortillas are not healthy when prepared with flour that is processed and has preservatives.
It doesn’t matter if the tortilla is freshly made, it was not made with a natural dough. Currently they sell us tortillas that are frozen or refrigerated, and those are not healthy either.
Our recommendation is not to leave the tortillas, but to decrease their consumption because the life we have in Kansas is too sedentary; that is, we don’t have much body movement because we don’t walk, since we use the car all the time, either because of distances or because of the weather.
Don’t stop eating tortilla, but avoid eating 5 or 6 pieces at each meal, because that is a custom that we have very ingrained. It is better to put more vegetables in the preparation of your food, so you will not be hungry.
Remember that the tortilla is part of the group of grains and it is not good to eat them in excess.
