Chicken meatballs in green sauce


Ingredients:

• 1 lb. ground chicken

• 1 egg

• 1 shredded carrot

• 1/4 cup cooked white rice

• 1/2 ‘bolillo’ bread soaked in milk

• 1 boiled egg, diced

• 6 green tomatillos

• 1 sprig of cilantro

• 2 serrano peppers (to taste)

• 1/2 onion

preparation:

- Blend tomatillos with peppers, onion and cilantro.

- In a saucepan seasoned the tomatillo sauce and season with salt or seasoning.

- Let it boil for approximately 7 minutes.

- In a container, mix the meat with carrot, ‘bolillo’ bread, rice and the raw egg.

- With that mixture make some balls and in the center of each place 2 squares of boiled egg and pour them into the tomatillo broth.

- Let boil over low heat until the meatballs are fully cooked.

This dish is served hot and may be accompanied with white rice or a tortilla.

Remember not to duplicate the grains.
