Cauliflower cakes with cheese in tomato sauce for 6 people with $5 of budget
Ingredients:
• 1 fresh cauliflower $2
• 2 cups of mozzarella cheese $1
• 5 red tomatoes $1
• 2 eggs $0.50
• ½ onion $0.25
• 1 cloves of garlic $0.15
• Salt and pepper $0.10
Process:
- Prepare the sauce by liquefying tomatoes, onions and garlic. Let it season in a saucepan for a few minutes and add 3 cups of water, and let it boil.
- Chop the cauliflower in small pieces and boil it in salted water for 10 minutes.
- Drain and squeeze excess liquid using your hands and a strainer.
- Mix cauliflower with eggs, mozzarella cheese, salt and pepper.
- In a hot pan, pour a tablespoon of the mixture and form the pancakes.
- In the hot saucepan, drop gently the cauliflower cakes.
- This dish is served hot and can be accompanied with white rice.
