Vegetable soup with meatballs and white rice
for 4 people with $10
• 1 pound ground turkey $4
• ½ large finely chopped onion $0.50
• chopped spearmint $0.10
• chopped parsley $0.10
• 3 tbsp. of bread crumbs $0.10
• 2 sliced carrots $0.50
• 2 large sliced zucchinis $0.50
• 2 large chopped potatoes $0.40
• ground pepper $0.10
• 1 tablespoon dried marjoram $0.10
Broth:
• 4 tomatoes $1
• ½ roasted onion $0.40
• 2 cloves of roasted garlic $0.10
• ½ teaspoon ground cumin $0.10
• natural chicken or beef broth
• white rice $1
• ½ liquefied pineapple for water $1
preparation:
- Blend tomato, onion, garlic and cumin to prepare the broth where you will cook the meatballs.
- While boiling the broth:
- In a pan, fry onion, spearmint and parsley, when they are stir-fried, turn off the heat.
- Add condiments and bread crumbs, stir; add a little water and meat and mix perfectly.
- Form the balls of meat (meatballs); and if you like, fill them with cheese, green peppers, or boiled egg.
- Put them in the broth to cook.
- At the end, add chopped vegetables (carrots, zucchinis and potatoes) and let them cook.
- Season to taste with salt and pepper and marjoram.
- Serve with white rice.
