Pork in tomatillo sauce

Ingredients:

• 1 lb. pork tenderloin, cut into cubes

• 1 tbs. oil

• 6 tomatillos

• ½ onion

• 1 garlic clove

• 4 jalapeño peppers

• Salt and pepper to taste

Directions:

• Heat oil in a large skillet over high heat, and add tenderloin.

• Season with salt and pepper, and cook in medium heat for 10 minutes.

• Put tomatillos, jalapeño peppers, garlic and onions in a sauce pan and boil for 5-7 minutes. Allow them to cool down, and blend.

• When meat is brown, add salsa, cover and simmer for another 15 minutes or until meat is tender.

• You can serve it with red Mexican rice.
